My daughter and I spent the day canning and jamming. Peaches, raspberries, pineapple and blackberries. We inventoried our jars, pints, half pints and quarter pints, lids, rings, pectin, and sugar. Check. Then we chose our recipes. I found a light syrup even lighter than the Ball canning book recipe. 2 cups sugar to 6 cups water to equal 7 cups liquid. We doubled the recipe. It was just enough for our day.
I think the part that took the longest was getting ourselves organized. What kettle to use on what burner and the assembly line. Once we figured that out, we were on our way.
We’re on our way. First batch in the canner and second boiling.
We canned peaches and made peach raspberry, peach pineapple and peach blackberry jam. We want to make more of all of it. We have enough of everything.
Aren’t the colors wonderful!
