Yesterday was cold and the day before brought about 5 inches of snow. I wasn’t stopped by that. In my old life I would have been terrified to drive the ten miles to town. I’ve been getting some practice driving in the snowy conditions. (It’s been 25 years since I drove in these conditions) Thankfully my car does super and it was only a couple miles. I wanted to make Chicken soup. I bought a whole chicken, took it home and cooked it in a large pot with some onion, celery, carrots and bay. I had also been looking at getting some noodles but after seeing the price of $4.50 for a pound of noodles, I decided to make my own.
I don’t make them often but they are so easy. Here they are drying on a towel on my kitchen table. Since I made so much soup I decided to can it in pint jars. Just enough for one. I can add the noodles later.
After an hour and fifteen minutes I had canned chicken soup and my dinner. I put two quart jars in the fridge and will probably take some over to my daughter’s house as the last of the family has come down with the flu.
I ended up with 8 pints for future dinners.
