I’ve been so excited to start harvesting. I’ve been routinely getting cucumbers and they are delicious. I’ve made a creamy cucumber/tomato salad, vinegared cucumbers, and of course just fresh from the garden. Squash has been coming on and since the plants are so large, I’ve missed some.
I didn’t think I had any zucchini but yes I did….
So far the tomatoes have been eaten as soon as they come off the vine. Peppers: I have an assortment of peppers growing, I pick them in order to get more for my salsa canning, later this summer. In the meantime, I have been roasting, peeling and freezing them for later use this winter.
This week I plan on canning some beets. I will be pickling a few. I’ve found out that my youngest granddaughter loves my pickled beets, so she’ll be getting some. Mom loves that and she’ll get some. I’ve ordered this from Amazon and will wait till it gets here this week. I’ve tried this before and found it so easy and helps keep the heat and mess out of the kitchen.
I’ll get a propane tank before this arrives. I will boil my beets in this and when they are ready to peel, I will put them in a cooler filled with ice and water, I will even peel them outside and just take the peeled beets into the house for slicing and canning.
