I have never been able to can pickles. I’ve tried, well water, distilled water, alum, bottled water. Nothing I did worked. They always came out mushy. Last year I helped my girlfriend can pickles. Her family loves her pickles and put their orders when they come to town. So I decided to help her can pickles and they are wonderful. This year was my first year to can pickles. We went to the opening of our Saturday Market and had our cukes bagged and ready to pay for . Had to wait for the opening bell. I purchased 35 pounds of great looking cukes.
A couple of things she did was to immediately submerse the cucumbers in a cooler with ice and water. Lots of ice. Make sure your brine is boiling hot and immediately pack and fill jars. That’s it. Sounds so easy but I have had nothing but mushy pickles in the past. NOT anymore! Thanks Toni. BTW, I got 35 quarts and 2 pints. Not bad.
