I look daily at a few baking blogs. Sally’s Baking Addiction is one of them. She had a Pumpkin Crumb Cake Muffin that looked interesting, and I had everything in the pantry for it. So I made it. Her notes say that is it pretty sweet so with that information, I decided to reduce the sugar content even more than in her recipe. They were still sweet, but maybe that’s because I’ve intentionally reduced my sugar intake drastically the past few months.
I made these with the idea of having only one and gifting the rest of them. My aunt is in assisted living and she was always my mentor when it came to sewing, quilting, baking and cooking. She was an awesome baker. I know that she misses the “from scratch” cooking and baking. So these were made with the idea of treating her.
I don’t know why I didn’t take any pictures of these. Indulge yourself with Sally’s pictures. You’ll want to whip these up also.
